			<content:encoded><![CDATA[<p>This recipe is completely inspired by my first, but hopefully not last, visit to <a href="http://www.vedgerestaurant.com/">Vedge</a> restaurant in Philadelphia. The hubs and I were celebrating our veganversary and wanted to go somewhere special. Special does not begin to describe Vedge. From the minute I walked in, my vegan heart skipped a beat. As we were ushered past the vegan bar and into the main dining room, the ambiance and decor came together like magic. Minimalist in it's style, yet warm from the ample glowing ceiling lights, with every detail of this historic building thoughtfully restored... all with a neutral palette which quickly draws your eye to the gorgeous food on the tables. That is the real star of this place. We sit down and are given the menu and the day's "dirt list" which is the daily farm-to-table special collection of vegetables. We quickly order beer and begin the hard task of figuring out what food to order. Kung pao cauliflower with peanuts, black vinegar, and cilantro or asparagus &#038; garlic mustard soup w/ preserved lemon and pepitas? How about both. So the food arrives and we dig in. Food orgasms begin. Sorry but seriously, those vegetables were that good. So we order two more plates of veggies. Brussels sprouts, shaved and grilled with smoked mustard arrives. We moan our way through it, savoring every delectable bite. It dawns on me that I have never had vegetables coaxed to such beautiful perfection before. It makes me want to cry tears of joy. I need to take a moment... Needless to say there were many more plates of food and of course dessert, which will require a whole post on it's own. I left Vedge so impressed and so inspired. The hubs and I set out to create our own version of those Brussels sprouts that would be quick, simple, and easy... but still taste special. And here you have it. This truly feels gourmet. It would be a great side dish to impress dinner guests with, or to make the foodie in you sing... or to just celebrate this gift of life. Peace!</p>

<h3>Ingredients:</h3>
<p><i>Smoky Mustard &#038; Tahini Sauce:</i></p>
<ul class="postno">
<li>1/8 cup spicy brown mustard</li>
<li>1 TBS tahini</li>
<li>1 tsp nutritional yeast</li>
<li>1/4 tsp smoked paprika</li>
<li>1/8 cup water</li>
<li>salt &#038; pepper to taste</li>
</ul>
<p><i>Brussels Sprouts:</i></p>
<ul class="postno">
<li>1 lb or more Brussels sprouts, trimmed and thinly sliced</li>
<li>1 TBS canola oil</li>
<li>1/4 to 1/2 tsp salt (depending on what saltiness you like)</li>
<li>1/8 tsp black pepper</li>
</ul>
<h3>Directions:</h3>
<p>Preheat a grill with a cast iron skillet or pan over medium heat. Next, make the mustard sauce. Pull all ingredients except the water into a bowl and whisk rapidly until combined. Slowly add water while whisking until the mixture becomes a thick creamy sauce. Add more water if needed to help thin it out a bit. </p>
<p>In a large bowl toss the Brussels sprouts with the canola oil, salt &#038; pepper. Once grill and pan are heated, add sprout mixture and cook stirring and tossing frequently for 3 - 5 minutes or until the sprouts just start to get browned on the edges. Be careful not to overcook, you still want them to have some texture. Pile them neatly onto a serving platter and drizzle with mustard sauce and more fresh cracked black pepper. Makes 4 generous sides. </p>

			<content:encoded><![CDATA[<p>Many of you know by now how passionate I am about my Mexican flavors. I am always dumbfounded by the people I meet who don't like Mexican food. When I dig deeper, turns out most of their experiences come from that taco fast food joint, that now mashes Doritos into their food, obviously to make it more authentic. Please note the dripping sarcasm. Well no wonder they don't like Mexican! Mexican food is packed full of flavor punches, it doesn't have to be hot, and mostly I find it simple and honest... just my kind of food. Now onto Guacamole. We eat guacamole in our house at least 2-3 times a week. I buy avocados in bulk and we feel lost when we don't have some sitting on the counter ripening. But alas, it wasn't always this way. I used to despise guacamole because the only ones I had ever tried were loaded with sour cream and lacked flavor. It was on a trip to Maine one summer that we sat in a Mexican-Italian restaurant (yes I know that sounds scary, but in remote Maine you can often find dual cuisine restaurants) and decided, upon recommendation of the waitress, to try their guacamole. My life has never been the same. It just goes to show you that you can be anywhere on this great earth to find inspiration. I eat guacamole pretty much everywhere I go and consider myself an aficionado at this point. My guacamole has a good garlicky base, a mini-kick of heat from jalapenos, the crunch of fresh onions, the herbacious wonderfulness of cilantro, and enough salt to elevate all those flavors. As a family, some of us like our guac creamy, and others like big chunks of avocado. So I usually try to meet in the middle so we are all happy. <h3>Ingredients:</h3>
<li>1/4 cup sweet onion, diced</li>
<li>1/4 cup tomato, diced</li>
<li>1 garlic clove, minced</li>
<li>2 T cilantro, minced</li>
<li>2 tsp fresh jalapeno, minced</li>
<li>1/2 tsp salt, more to taste</li>
<li>1/2 tsp of lime juice</li>
<li>1 tsp canola oil</li>
<li>4-5 large ripe avocados, pitted and scooped from it's shell</li>
</ul>
<h3>Directions:</h3>
<p>Combine all ingredients in a large bowl, mash with either a fork and spoon, or use a potato masher (that's what I use). Mash to the consistency you like. Taste and add more salt if needed. Enjoy right away. If you are planning on eating it later on, press plastic wrap directly on top of the guacamole to keep the air out and keep it from browning. Put it in the fridge until ready to enjoy. Best served with warm tortilla chips. Makes enough for about 6 servings.</p>

<h3>Ingredients:</h3>
<li>1 - 10 oz box of Hodgson Mill Whole Wheat Bow Tie Pasta, cooked according to package</li>
<li>3 cups of diced heirloom tomatoes, or any tomatoes will do</li>
<li>4 garlic cloves, minced</li>
<li>3 T extra virgin olive oil</li>
<li>1/2 tsp red pepper flakes</li>
<li>4 green onions, thinly sliced</li>
<li>2 T fresh basil, minced</li>
<li>1 tsp fresh Italian parsley, minced</li>
<li>1/2 tsp fresh thyme, minced</li>
<li>1/2 tsp fresh oregano, minced</li>
<li>3/4 tsp light agave syrup</li>
<li>1 tsp salt</li>
<li>black pepper, to taste</li>
</ul>
<h3>Directions:</h3>
<p>While pasta is cooking, heat oil, garlic, and pepper flakes in a small non-stick skillet over medium heat. Once garlic begins to sizzle, cook for 1 minute more and then remove from heat. Set aside. After pasta is done cooking, drain and rinse with cold water. Shake the pasta  well in strainer to dry. Place pasta into a large bowl. Top with garlic and oil mixture and all the remaining ingredients, tossing gently with a wooden spoon until well combined. You can serve the pasta salad now, or cover with plastic wrap and chill until ready. Enjoy! Serves 6-8 as a side.</p>

			<content:encoded><![CDATA[<p>This is one of our go-to sides for the summer, well... this, sweet corn, and sliced tomatoes. This is super easy to make, requires minimal ingredients, and you will be a rock star when you serve this to your friends and loved ones. You could go all out and serve this on top of pasta or even risotto if you like, but it's fantastic on it's own. In fact it's so good that we can often be caught eating this with our fingers in our house... who has time for a fork and knife? Besides that's what napkins are for. I know, I wish we were more civilized at times, but then again I am just grateful that everyone in our little family is so enthusiastic about the beautiful vegan food. So let's talk about asparagus... Please, please always smell your asparagus before you buy it. If it stinks, do not buy it. Use your sniffer people, it's the best test for freshness. Next, when trimming asparagus, I use the snap method. Hold a spear at both ends and bend it until it breaks, discard the lower, thicker stem portion (or save it for broths), and only use the upper portion. Sometimes people will test this snap method for one or 2 spears, and then chop the remaining asparagus based on the approximate length of where the tester pieces broke. I enjoy all the extra work of doing each individual piece by hand, but mostly I just hate it when you get the tough part of the stem. Use whatever method works best for you, just don't forget to do it with love <img src='http://www.peacefulplate.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' />  Peace!</p>

<h3>Ingredients:</h3>
<li>1 lb bunch of asparagus, trimmed (or whatever size bunch you find)</li>
<li>2 T Balsamic vinegar</li>
<li>3 cloves garlic, minced</li>
<li>2 tsp olive oil</li>
<li>1/2 tsp sea salt</li>
<li>fresh black pepper, to taste</li>
</ul>
<h3>Directions:</h3>
<p>Preheat grill to medium-high heat. Place asparagus in a shallow dish and top with remaining ingredients, vinegar through pepper. Use your fingers to gently toss everything until the asparagus is well coated. When grill is ready, place asparagus on grates, close lid, and let cook for 2-3 minutes. Then, using tongs, flip asparagus over and grill the other side for another 2-3 minutes. You want them to to have good grill marks, but not get too soft. They should still be bright green and somewhat stiff when you remove them from the grill. Place them back into the shallow dish and  serve. Depending on the amount of asparagus used, 1 lb serves approximately 4 people. </p>

			<content:encoded><![CDATA[<p>So in my last post you got to know how much I love grilling, and in previous posts you found out that sometimes life comes knocking on my door with lots of lemons. Well as luck would have it I got a fresh batch of life's lemons and could think of no better way to restore my inner balance then firing up the grill <img src='http://www.peacefulplate.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' />  It's funny how cooking can be such a stress reliever. It's all on how you look at it. I try not to approach a recipe filled with stress, instead I always look at it as a loving adventure. Even if it doesn't turn out, I find I learn so much in the process. And because I often cook with my sweet hubs, I look forward to the time we spend together in the kitchen. I know, I am one lucky lady. He also does dishes and laundry, sorry, but he's an only child (I get asked that a lot). Anyways, I have been dying to try a grilled romaine salad and wanted to pair it with a tangy lemony Caesar dressing and top it with crunchy garlic-kissed croutons.... Must pause to wipe the drool off as I am typing this. Ok, I am composed again. With lemons in hand I set out to create a dressing so creamy, rich, and satisfying that even the pickiest person would not miss the eggs. This dressing is lemon perfection. It will brighten even your grayest day. This salad is so easy to make too, but looks unbelievably gourmet. It's 5-star dining without ever leaving the house or paying the HUGE bill <img src='http://www.peacefulplate.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' />  that's the best kind of dining! <li>2-3 hearts of romaine lettuce, sliced in half lengthwise, washed well and patted dry</li>

<h3>Directions:</h3>
<p>Preheat oven to 350 degrees. Line a cookie sheet with parchment (this step is optional, but makes for easy clean up). In a large bowl or ziploc bag, toss all of the crouton ingredients together. Spread in an even layer on the cookie sheet and bake for 5 minutes, remove from oven, flip croutons over and bake for another 3-5 minutes until crispy and lightly golden. Set aside.</p>
<p>Next, preheat the grill over medium heat. Then place all the dressing ingredients, except the olive oil, into a food processor. Puree until everything is well combined. While the machine is still running, slowly drizzle in the olive oil. Puree for a few more seconds after the last of the oil is added, then stop the processor. The dressing should be slightly thick and creamy, very much the consistency of a Caesar dressing. Set dressing aside. I usually put mine in a squeeze bottle at this point so I am ready to create pretty drizzles.</p>
<p>Drizzle a little olive oil over the cut side of the lettuce and sprinkle lightly with salt and pepper. Place romaine hearts on the grill, cut side down, and sear for just a minute or two. Gently remove from the grill. </p>
<p>To serve, place a romaine heart, cut side up on a plate or platter. Using your squeeze bottle or a spoon, drizzle the lettuce with some of the tangy lemon dressing. Top with a handful of croutons and a little fresh ground black pepper. Serve immediately. The longer the lettuce sits the more it will wilt, so serve as quickly as you can after grilling. Serves 4-6, 4 if you use 2 hearts and 6 if you use 3 hearts. Enjoy!</p>

			<content:encoded><![CDATA[<p>Summer is almost here! I can barely contain my joy these days when I walk outside in the morning and feel the warm sun beating against my face. Even though it's still chilly enough that I need to don my favorite thick brown sweatshirt, the sunshine itself is enough to remind me that the gray days of winter are over and the warm days filled with buzzing bees will soon be here. I love living here in the north where we go through the seasons, year-after-year, it really makes me appreciate it when the seasons change. Now we are in the midst of spring with the flowers blooming in all their glory, the trees unfurling their leaves, the grass returning to it's vibrant green lushness, you get the idea... But maybe it wouldn't look so stunning to me if I was spoiled and had it year round, ok I did say maybe <img src='http://www.peacefulplate.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' />  Here we get to see all of these amazing changes happen right before our eyes and over the course of a few weeks we go from cold constant grey to brimming life at every seam. It truly is amazing. So all of this means one thing...summer is on it's way. I already have picnics and dinners outside on the deck planned in my head. Pitchers of iced tea, seitan kebabs on the grill, mmmm! One of my most favorite sides for summer is macaroni salad. And as you know I like to experiment with flavors, a lot. Sometimes my family enjoys it, sometimes they cringe when I start whipping together ingredients like a mad scientist. This one was not too hard to sell, we love curry and we love macaroni salad. So I married them. There wasn't an official ceremony or anything, but the food at the reception was amazing... Now I can say that not only do I love macaroni salad, but I love creamy curry macaroni salad. It's something different, a twist if you will on the faithful standard. It doesn't stray too far from the original, but it travels just enough to make it an interesting and delicious ride. <li>8 oz macaroni noodles, or pasta of your choice, cooked al dente, drained, rinsed, and cooled to room temperature</li>
<li>1/2 cup yellow, orange or red pepper, diced</li>
<li>1/3 cup carrots, diced</li>
<li>1/2 cup frozen peas, thawed</li>
<li>6 green onions, thinly sliced</li>
<li>1 TBS cilantro, minced</li>
<li>1/2 cup + 1/3 cup Vegenaise</li>
<li>1 tsp curry powder</li>
<li>1 tsp agave nectar</li>
<li>1 tsp apple cider vinegar</li>
<li>salt &#038; pepper to taste</li>
</ul>
<h3>Directions:</h3>
<p>Place the pasta, vegetables, and cilantro in a large bowl, tossing gently to combine. In a separate small bowl whisk together the Vegenaise, curry, agave, and vinegar until the curry has dissolved into the liquids. Pour over pasta and stir gently with a wooden spoon or spoonula until the pasta and veggies are fully coated in creamy curry goodness. Taste, add salt and pepper as needed. Cover with plastic wrap and refrigerate for at least 30 minutes or longer to get the salad chilled and give the flavors a chance to marry. Serves 6 as a wonderful summer side. </p>
